Ακολουθήστε τον νέο λογαριασμό vegan.healthy.plan περισσότερα για καθημερινές συνταγές 😘 Κρεμώδης Vegan Mushroom Wild Rice Soup by crumbs.and.caramel 🥣 Υλικά 7 κουταλιές της σούπας έξτρα παρθένο ελαιόλαδο, χωρισμένα 14 ουγκιές μανιτάρια*, κομμένα σε φέτες (~6 φλιτζάνια) 2 κουταλιές της σούπας ξύδι βαλσάμικο 1 κρεμμύδι, κομμένο σε κύβους 4 σκελίδες σκόρδο, ψιλοκομμένο 1 κουταλάκι του γλυκού θυμάρι ξερό 1 κουταλάκι του γλυκού ρίγανη ξερή 1/2 κουταλάκι του γλυκού δεντρολίβανο ξερό, ψιλοκομμένο 1/4 κουταλάκι του γλυκού αλεσμένο φασκόμηλο 1/2 φλιτζάνι λευκό κρασί (μπορεί να χρησιμοποιήσει ζωμό vegan) 1/3 φλιτζάνι αλεύρι για όλες τις χρήσεις (ή μείγμα αλευριού για όλες τις χρήσεις 1:1 χωρίς γλουτένη) 5 φλιτζάνια ζωμό σούπας vegan 1 1/2 φλιτζάνι βέγκαν γάλα χωρίς ζάχαρη (εγώ χρησιμοποιώ σόγια. Αποφύγετε το γάλα ρυζιού που είναι αρκετά αραιό.) 2 κοτσάνια σέλινου, κομμένα σε φέτες (~ 2/3 φλιτζάνι) 2 καρότα, κομμένα σε κύβους ή κομμένα σε μισά φεγγάρια (~1 φλιτζάνι) 1 φλιτζάνι μείγμα άγριου ρυζιού 7 oz ψιλοκομμένο λάχανο ή σπανάκι ~3 φλιτζάνια/1 ματσάκι αλάτι και πιπέρι για γεύση Σε μεγάλο βαρύ πάτο κατσαρόλα, ζεσταίνουμε 2 κουταλιές της σούπας λάδι σε μέτρια προς δυνατή φωτιά. Όταν λαμπυρίσουν, προσθέστε τα μανιτάρια και μαγειρέψτε για 8-9 λεπτά ή μέχρι να ψηθούν και να καραμελώσουν σε σημεία. Προσθέστε το βαλσάμικο ξύδι, μαγειρεύοντας για άλλα λίγα λεπτά ή μέχρι να εξατμιστεί κυρίως η υγρασία και τα μανιτάρια να γλασάρουν. Τοποθετούμε τα μανιτάρια σε ένα πιάτο για αργότερα. Χαμηλώνουμε τη φωτιά σε μέτρια και προσθέτουμε τις υπόλοιπες 5 κουταλιές της σούπας λάδι. Όταν γυαλίσει, προσθέστε τα κρεμμύδια. Μαγειρέψτε μέχρι να μαλακώσει, 2-3 λεπτά. Προσθέτουμε το σκόρδο, το θυμάρι, τη ρίγανη, το δεντρολίβανο και το φασκόμηλο, βράζοντας για 30 δευτερόλεπτα. Σβήνουμε με το κρασί, μαγειρεύοντας μέχρι να φύγει η περισσότερη υγρασία. Πασπαλίζουμε με το αλεύρι, ανακατεύοντας συχνά για 2 λεπτά για να ψηθεί το αλεύρι. Ρίχνουμε 2 φλιτζάνια ζωμό, ανακατεύοντας συνεχώς για να μην σχηματιστούν σβώλοι από το αλεύρι, μέχρι να πήξει το μείγμα. Προσθέστε τον υπόλοιπο ζωμό, το γάλα, το σέλινο, τα καρότα και το ρύζι και αφήστε τα να σιγοβράσουν. Καλύψτε και μαγειρέψτε για όσο διάστημα αναφέρεται στη συσκευασία του ρυζιού – αυτό θα διαφέρει ανάλογα με το μείγμα που χρησιμοποιείτε. Στο τέλος του μαγειρέματος προσθέτουμε το λάχανο. Μαγειρέψτε για 2-3 λεπτά μέχρι το κέιλ να γίνει λαμπερό και να μαλακώσει. Ανακατεύουμε ξανά τα μανιτάρια στην κατσαρόλα. Πρόσθεσε ΑΛΑΤΙ και πιπερι για ΓΕΥΣΗ. Σερβίρετε αμέσως.
